Turmeric Salmon with Roasted Vegetables
Ingredients:
- 1 tbsp turmeric powder
- 1 tsp ground ginger/ ginger paste
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup chopped roasted almonds
- 1 red bell pepper, chopped (approximately 200 grams)
- 1 green bell pepper, chopped (approximately 200 grams)
- 1 red onion, chopped (approximately 150 grams)
- 1 zucchini, chopped (approximately 200 grams)
- 1 tablespoon olive oil
Steps:
- Preheat oven to 200°C.
- In a small bowl, combine turmeric, ginger paste, black pepper, and salt. Rub the mixture onto the salmon fillets.
- In a separate bowl, toss the chopped vegetables with olive oil.
- Spread the vegetables on a baking sheet and place the salmon fillets on top.
- Roast for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
- Top with chopped roasted almonds and serve.
