Turmeric Salmon with Roasted Vegetables

Ingredients:

  • 1 tbsp turmeric powder
  • 1 tsp ground ginger/ ginger paste
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup chopped roasted almonds
  • 1 red bell pepper, chopped (approximately 200 grams)
  • 1 green bell pepper, chopped (approximately 200 grams)
  • 1 red onion, chopped (approximately 150 grams)
  • 1 zucchini, chopped (approximately 200 grams)
  • 1 tablespoon olive oil
Steps:
  1. Preheat oven to 200°C.
  2. In a small bowl, combine turmeric, ginger paste, black pepper, and salt. Rub the mixture onto the salmon fillets.
  3. In a separate bowl, toss the chopped vegetables with olive oil.
  4. Spread the vegetables on a baking sheet and place the salmon fillets on top.
  5. Roast for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.
  6. Top with chopped roasted almonds and serve.
