Spicy Peri-Peri Chicken Skewers
Ingredients:
- 500 grams of boneless chicken breast or thigh, cut into bite-sized pieces
- 2 tablespoons peri-peri spice
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Skewers (if using wooden skewers, soak them in water for 30 minutes)
Instructions:
- In a bowl, mix peri-peri spice, olive oil, lemon juice, and salt together to form a marinade.
- Add the chicken pieces to the marinade and coat them well. Let it marinate for at least 30 minutes, or refrigerate for a few hours to enhance the flavor.
- Preheat your grill or grill pan over medium heat.
- Thread the marinated chicken pieces onto the skewers.
- Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Serve the peri-peri chicken skewers hot with your choice of side dishes like a fresh salad or grilled vegetables.
