Spiced Chia Seed Pudding

Ingredients:

For the pudding:
  • 1/4 cup chia seeds
  • 1 cup milk of your choice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (adjust to taste)

For the topping (optional):

  • Sliced fresh fruits (berries, banana, mango, etc.)
  • Chopped nuts (almonds, pistachios, etc.)
  • Dried fruits (blueberry, cranberries, etc.)
  • Shredded coconut

Instructions:

1. In a bowl, combine the chia seeds, milk, ground cinnamon, ground cardamom, ground ginger, vanilla extract, and sweetener (honey or maple syrup).
2. Whisk the mixture well to ensure that the chia seeds are evenly distributed and not clumping together.
3. Cover the bowl and refrigerate the mixture for at least 4 hours, or ideally overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.
4. After the pudding has set, give it a good stir. If it's too thick, you can add a little more milk to achieve your desired consistency.
5. Divide the spiced chia seed pudding into serving bowls or glasses.
6. Top the pudding with your choice of sliced fresh fruits, chopped nuts, dried fruits, and shredded coconut.
7. Serve the spiced chia seed pudding as a nutritious and flavorful breakfast or snack.
